Karen from Pasadena, California is trying to recreate a white gazpacho she used to eat as a child


  • 6 Inch Loaf of French Bread with NO Crust
  • 1 1/2 Cups Vegetable Stock
  • 2 Hot House Cucumbers Peeled
  • 1/2 Sweet Onion Chopped
  • 6 Garlic Cloves
  • 3 Whites of Green Onions
  • 1/2 Cup Almonds
  • Juice of 1 Lemon
  • 1/3 Cup White Wine vinegar
  • 1/3 Cup Olive Oil
  • 1/2 Cup Heavy Cream
  • Diced Avocado for Garnish
  • Diced Poblano Pepper for Garnish
  • Diced Roma Tomato For Garnish
  • Salt and Pepper To Taste

Procedure:  Be sure to remove the crust from the bread and soak it in the vegetable stock for 5 minutes.  In the mean time prepare vegetables accordingly.  In a blender add in chopped cucumber, sweet onions, garlic, green onions, almonds, and squeezed french bread and puree.  Slowly drizzle in lemon, vinegar, olive oil, stock, and heavy cream.  Adjust seasonings and let chill.  Serve cold with garnish of chopped avocado, poblano pepper and roma tomato. Enjoy!
