We received more emails about what side to put with proteins. In response, we will be doing a few different series on starches and sides for proteins.

  • 3 Idaho Potatoes
  • Olive Oil To Coat
  • Kosher Salt To Coat
  • 2 TBS Scallions
  • 4 TBS Cheddar Cheese
  • 2 TBS Sour Cream
  • 1 TBS Roasted Garlic Olive Oil
  • 1 Ounce Butter
  • 4 TBS Rendered Bacon
  • Salt & Pepper To Taste
  • Melted Butter To Coat

Procedure: Coat potatoes in olive oil and salt and place on a baking sheet in the oven on 350 degrees for 60-80 minutes.  In the mean time render 8 ounces of bacon and set aside.  Once potatoes are done cut in half and scoop out the center.  Take care not to break through the peel of the potato and also set the potato peel to the side.  Run the inside that was scooped through a food mill or use a hand blender to make smooth.  Once smooth fold in remaining ingredients and be sure to season.  Scoop back into the potato shells and brush with butter.  Place back in the oven for an additional 20 minutes.  Serve hot and enjoy!
