Lester sent in an extremely boring recipe for Tuna Cakes, stay tuned as we fix him up!


  • 1 Ten Ounce Tuna Steak
  • 1 Ounce Butter
  • 1 TBS Garlic
  • 2 TBS Shallots
  • 1/4 Cup Red Pepper Diced
  • 1/4 Cup Yellow Pepper Diced
  • 1/4 Cup Green Pepper Diced
  • 1/4 Cup Poblano Pepper Diced
  • 1/2 Cup Mayonnaise
  • 1/3 Cup Dijon Mustard
  • 1 Egg
  • 2-2 1/2 C Panko Bread Crumbs + More to Coat
  • Old Bay Seasoning To Taste
  • Salt And Pepper To Taste
  • 1/4 C Olive Oil

Procedure:  Season up tuna with salt and pepper and grill it until medium-well.  Once cooked place in the cooler to chill.  Next cut all vegetables accordingly and sweat on medium-high heat in butter.  Once the vegetables are done place in the cooler to chill as well.  In a mixing bowl add in mayonnaise, mustard, egg and mix well.  Next add in chilled vegetables and diced chilled tuna.  Mix very well.  Next add in panko crumbs and season to taste with old bay.  Form the tuna into 3 inch patties and coat the outside in the reserved panko bread crumbs.  Saute in a skillet in 1/4 cup olive oil.  Be sure to pat dry and serve hot.  Enjoy!
