For all those people asking how to make the best mashed potatoes, here they are! Just in time for Thanksgiving!

  • 3 lbs Golden Yukon Potatoes
  • 1 C + 2 TBS Olive Oil
  • 1/2 C Garlic Cloves + 12 Garlic Cloves
  • 1 C Heavy Cream
  • 2 OZ Butter
  • Salt and White Pepper To Taste

Procedure:  Place 1/2 cup of garlic cloves and 1 cup of olive oil in a sauce pot on medium-low heat for 20 minutes.

In the meantime peel and quarter potatoes and place in a large pot with cold water and the 12 garlic cloves.  Salt the water to make it taste like the ocean and cook on medium-high heat for 20-25 minutes.

Once the garlic is done roasting strain and reserve the oil.

Puree the garlic cloves in a food processor and stir it into the cream in a small pot on low heat.

Once the potatoes and garlic are done cooking, strain and run through a food mill until smooth into a large bowl.

Add in butter, 3/4 Cup of the roasted garlic cream, 2 TBS of olive oil and salt and pepper to taste.

Fold in ingredients and adjust seasonings to taste.

Serve hot and enjoy!
