Cathy of Sarasota, Florida keeps coming up with a tart and flavorless balsamic vinaigrette.

  • 1/3 Cup balsamic vinegar
  • 2 TBS chopped shallots
  • 1 TSP chopped garlic
  • 2 TBS chiffonade basil
  • 2TSP sugar
  • 1 Cup olive oil
  • Salt and pepper to taste
  • Salad Mix
  • 2 Cups baby spinach
  • 2 TBS roasted red peppers
  • 2 TBS roasted yellow peppers>
  • 3 Strawberries sliced
  • 1 TBS feta cheese

Procedure: In a mixing bowl add the vinegar, shallots, sugar, garlic, and basil.

While whisking, slowly drizzle in olive oil to emulsify the mixture. Salt and pepper to taste.

For the salad, simply mix all together and drizzle the balsamic vinaigrette right on top.
