Janie of Detroit, Michigan is looking for a diabetic solution to her cole slaw recipe.


  • 1 Sweet Onion
  • 3 Granny Smith Apples
  • 2 Belgian Endive
  • 2 Heads of Fennel
  • 2 TBS Parsley
  • 1 Cup Sour Cream
  • 1/3 Cup Red Wine Vinegar
  • 3 TBS Raw Horseradish
  • Salt & Pepper To Taste

Procedure:  Cut all vegetables accordingly and set aside in a bowl.  In another mixing bowl add together sour cream, red wine vinegar, and horseradish and mix thoroughly.  Add in vegetables and season to taste. Serve Cold and enjoy!!
